The Bulgarian yogurt starter is best with dairy milk, and it is literally the best. We’ve never had flavor like this from any other starter, and you can’t buy yogurt like this. We use 1% milk
and add 1/2 cup dry milk at a cooled-down temp of 160 Fahrenheit (mix some milk into the dry milk, then strain into the rest of the milk and continue with cooling before adding starter).
It is amazing.

Thanks Ivo. My ongoing interest in making greek.bulgarian yogurt at home in my kitchen is:
1…better texture
2…better flavor
3…fun process
4…better price than supermarket
5…more access to a wide variety of starter cultures

by using 1.5 grams of yogurt starter with about 1 liter of milk gives me 37.5 million cfu to the milliliter (maybe 37 million for milk measuring error)

I love yogurt especially in smoothies and frozen desserts. Would prefer to make my own without any additives. Can doctor them up as I see fit. Your culture is exceptional. I wanted to try your Greek culture now. Make in my 3 qt. Mini instapot. Perfect for half gallon of milk.
