Just tried kefir.
Excellent. The stuff in the supermarket tastes and smalls ghastly by comparison.
I have found that UHT milk is fine although perhaps lass tasty, but I like it.
Small milk bottles from a well-known burger chain, (think clown), are exactly a quarter of a litre and really useful.. They can be stood on/in base of Amazon Basics yogurt maker, 4 at a time, open, but with an inverted translucent flower pot over the top to keep the dust off. This I have used for some 4 hours at the start of the process to get it going a bit quicker..then just turn off the power and leave until morning, kefir is “done”, put plastic caps on and into fridge!

Have just tried the Kefir starter. Very good. Much nicer than the terrible stuff from the local shop!
Out of interest, I did use UHT milk. I always use it for yogurt with a little dried milk powder, but for kefir, added nothing.
Started it off in a 1.5 litre jar on the base of my yogurt maker, just to warm it up a bit for 3 hours..then left it, covered loosely. 12 hours later, warm milk! So, gave so another three hours with yog’ maker turned on, then switched off and went to bed. In the morning, splendid! Nice and gloopy and tasted fine. Probably didn’t need that long. Thought you might be interested. So UHT works, but a bit slower.
Might add a bit of honey to get the children interested..
How long might it keep in the fridge?
Can I keep a bit back as a starter? I think I saw that I can, but can’t find it now!

I recently had a starter for Kefir it is the best yet. Plain is nice, But Kefir has a flavour and is creamy.
