Everything was OK, no problems.
As I am the only one drinking kefir, as my wife is lactose intolerant, it just takes a little longer to finish the starter, and it has also been great at lasting through a few batches.

Hello, I made the sour cream, there was no whey. The sour cream turned out real thick like cream cheese. I let it sit at room temperature for 24+ hours. I used the Kefir starter and heavy whipping cream. I only made two cups and used 1/8 teaspoon of starter.
I am thinking of trying to make a cheesecake with it to see what happens. If it doesn’t work it’s no great loss.
Just wanted to let you know what happened.

Lovely! I prefer this to yoghurt – I have never liked it since I was a child many years ago!
Now I make a weekly batch of kefir to enjoy both at breakfast and as a dessert.
I also bought some filmjölk culture too that I am about to start making today. I was introduced to this in Sweden while visiting my friend and my son has recently made it for me to try. Now I can make my own.
