I don’t think I will ever buy store yogurt or kefir again. I love the Bulgaricus starter. I tried it with homogenized whole milk and non homogenized milk. Bothe we’re good. I need to measure my starter more accurately so I don’t waste it.

Although I followed the instructions that came with the product and on the site, and asked for help, the answer was supposedly I did so wrong that I need to throw out my kefir. Only worked in the first days. I am very disappointed.

Hi,
I am surprised to see a one star review from you. We did have an exchange of emails with you, which I can’t really publish here but in general, your request was for help because your kefir was changing its original quantities after a few iterations made with previously made kefir, while you preferred the original taste of the kefir, made with the starter.
After 5 or so back and forth emails in which we examined everything from your making to your incubation method, even looked at your setup and environment, where I suggested you make several changes for better results, it actually turned out that you are simply using way too much kefir to inoculate your new milk. You were using 200ml of kefir for your half a liter of milk, and that is the quantity needed for 4L of milk. As I explained, adding that much kefir to only half a liter of milk will basically deprive the strains from food as there is not going to be enough milk lactose for all to feed on and because of that your kefir could not ferment properly.
I then went ahead and suggested how much kefir to use for the milk and what to do in order to adjust it to your taste preferences and what to do with the kefir you don’t like.
So, I’m sorry but my answer was not that you did so wrong and you needed to throw out your kefir 🙂

I was researching the first issue and ran across a cool little video about how Bulgarian yogurt came from the Thraces people and how they didn’t get sick. I just want to try it to see if my digestion gets better.
