Hi Ivo,
some fifteen years ago I started making my own yoghurt with “west-European” starter cultures, because what you can buy in a store in Germany is just too sweet. Yet I stopped when I moved to Norway – Norwegian yoghurt is a little less sweet than German.
Last year, while being on the most stunning photo tour through Bulgaria, I discovered Bulgarian yoghurt, and found that even moving to Norway and the less-sweet-yoghurts here wasn’t good enough. I am so missing Bulgarian yoghurt…so I was about to send my coworker on a chase through a Swedish store for Bulgarian yoghurt, when I figured online stores are a thing these days. So here I am, exited to start making my own yoghurts again bringing a little bit of Bulgaria (in addition to some 5000 photos) to Norway. I cannot wait for the order to be delivered to finally start making it…not to mention dipping my spoon into the first one…

With the Sirene starter I had now quite a success!
Very good! I recommend to *keep* the temperature of the milk after the sirene starter culture and the rennet have been added at 37 deg. C for 1.5h. Second store it for some days, it
will get more intense in taste, harder in consistency and also a little bit more sour, as I remeber it from my holidays in Bulgaria. There is nothing better to start a meal than with a “Shopska Salad” with fresh grated sirene cheese on the top of it.

The sirene was an experiment and it was amazing, instead of brining I have marinated the feta in olive oil with herbs…took a jar to a party, and guests lined up for a taste! Just wish I could order the sirene starter in a larger quantity to make consecutive batches.
