I consistently produce the best sirene I have ever tasted with your starter. It is a straightforward procedure that results in a wholesome, organic sirene with none of the
additives, thickeners, sugars, etc., that are present in store-bought sirenes. I also no longer have to deal with disposing of the plastic containers from store-bought sirene, many of which are not suitable for recycling in our area. Your starter is fantastic – thanks!

I use the Bacillus Bulgaricus kefir starter for making hot sauce, which just happens to be fantastic! It was a complete accident as to how this came to be – I needed a probiotic starter to “encourage” my hot sauce ferment to do its thing and the Bacillus Bulgaricus kefir starter was the only thing I had on hand. The rest is history because it’s everything worked out great and some of the best hot sauce I’ve made. (And I’ve made a lot of fermented hot sauces…)

Our cook made one litre of sirene with your Bacillus Bulgaricus using raw cow milk. She needed to leave it set overnight. The result was perfect and was much enjoyed by everybody.
For us it is the ideal way of using our raw milk: in the coffee or tea it can smell a little too wild…
Our next experiment will be will coconut milk as we have to lactose intolerant members. I shall let you know.
