We have not forgotten you, with just the 2 of us we only make one batch a week & we find that the amount of starters we purchase lasts us for many months, probably be another month before we need to re order to top up our requirements.

Rob

Hi Ivo
I tried out the starter, it was very good, bread rose well and it was yummy. I am experimenting with using it to boost my own home grown starter, which is also yummy but can be heavy and doesn’t always rise well. Haven’t run out yet.
Thank you

Just been tucking into my sourdough loaf that was started from your starter. It was super effective!

Hi Ivo
Yes everything is fine. The Bulgaricus sourdough is working great. I have 2 starters in the fridge. The old-fashioned standard sourdough has been in the fridge for about 5 years.
Every 3 days, I feed the Bulgaricus sourdough starter and the old standard sourdough starter, with about 25 gr each of flour and water. I make 16 breakfast bread rolls with the 2 starters. I freeze the bread rolls and then defrost when required.
I notice that the Bulgaricus starter produces bigger bubbles than the old regular starter. So far, I can’t detect any difference in taste.

Hi Ivo,
Very happy with your starter, found it works better than other starters I have purchased or made from scratch.
I found it to make an excellent mother
Very little work required to reactivate it on a weekly basis, (make & bake sourdough once a week on average) found 50grams of flour & 50 grams of water quite sufficient to reactivate a 250gm mother prior to baking (use 150 gm starter for a medium size loaf then adding 75gm each of flour & water to the remainder& leaving for a couple of hours before refrigerating ).
A good fast rise was achieved on all occasions Good flavour development with little on no difference whether baked the
day of making or refrigerating for up to 48 hours for slow development.
Have used it to good effect on hard & soft white flours (commercial) & on Whole grain wheat & whole grain Rye (have an “Hawos billy 100” electric mill & mill my own grain as required)
My baking to date has included the above mentioned flours plus semolina & multi grain additives using plain mixes or combinations of the mentioned.
I have found it makes a slightly softer dough but has an incredible oven spring giving a good sized loaf on all occasions
Regards
Rob.

Hello Ivo,
I am into “backslopping”, so starters go a long way for me. Everything is fine; I promise I will buy no yogurt starter from anyone else. I have tried regular, Rose, and Greek yogurt and I like them all very much. I am looking forward to trying your new varieties when they become available.
And the sourdough starter is doing fine. I use it every other time I bake… I even use it in making fermented pancakes. Good stuff!!
Best wishes for a successful and Covid-free 2021!

Hi
The sourdough bread was fantastic! I loved the starter and I will feed it every week to keep it alive.

Hi!
It has been great. One thing though, the flavor was much better when fed for about a week after re-hydrating. It did make loaves sooner than that. No recipe change but those extra feedings brought out a good sourdough bread that the kids even eat with no complaint.
Thank you for offering this.

Hi Ivo
I have tried several times to make a sourdough starter but each time I have ended up with a black, toxic sludge !
I have just tried your sourdough starter. It was brilliantly easy and the result was outstanding – a little room for improvement, no doubt, but a good result for my first attempt.
I am now feeding the starter – it’s a bit like having a Tamagotchi.
I have just given some excess starter to a vegan friend who tried my bread and was ecstatic.
I have just placed a new yoghurt and order and I have ordered some for him too.
Hopefully, he will soon become a customer.
Best wishes et meilleurs voeux pour Noel et la nouvelle annee.
