I want to try to do the sourdough project in the next few days.
I was making boza up until a couple of months ago like a gallon weekly… Then I just got tired of it and stopped. I’d be willing to try it with the sourdough starter just to see if it’s gonna taste a bit better or different perhaps.

Haven’t tried the kefir yet but the sourdough was so good. The first loaf wasn’t as full of sour flavour but there was more in the second loaf. It might be my bread baking skills. I have faith in this starter though and the parish priest blessed the starter which we hope to have with us for generations.

Btw, fyi, every flour is different. The kind and how it’s ground.
I presently use kammut from 2 different suppliers ground 2 different ways. One I have to use more water, one less. So one absorbs more the other absorbs less.
I thought I had ruined the starter. I did go ahead and feed it lime you said. And my first loaf is on the left. I made a second load because I didn’t think the first one was going to turn out. And the second loaf turned out even better. Thanks for your help. It’s truly delicious.
