My Grandmother immigrated from Hungary and ate yogurt all her life and died at the age of 97. My Mother has made and eaten Bulgarian yogurt all her life and is going strong at 80 years of age. I have eaten yogurt most of my life and am going to start making it myself at 62 and would like to get another 35 year under my belt. I believe in yogurt and Bulgarian yogurt is the best tasting out of any I have tried.

Having been a Bacteriologist for decades in the medical field and also having majored in Chemistry, I had wide experience in anything to do with bacteria and organic chemistry. In my early years I was more interested In human medical infections where Lactobacilli were sometimes relevant, such as subacute bacterial endocarditis and mouth infections. Yoghurt was far from my mind.
As I aged I began to get some of the old age problems, including fructose malabsorption problems and other bowel problems and became interested in diet and lactose. Then a few years ago my wife and I when on a holiday in Bulgaria, made contact with local yoghurt and found it tasty and comforting to my bowel. I looked at commercial products and most were thickened by inulin and this is not good for me, so then got onto your starter culture. I notice that most commercial products don’t have the bulgaricus strain but have other lactobacilli, so I have gone with yours. I also notice that yoghurt in USA has the bulgaricus strain.
The most important factor I have found when trying to get a reproducible batch is the preheating of the milk. The milk has to be heated up to around 95 C and cooled to 42C before inoculating. It appears as if the fat “micelles” have to be changed and probably the proteins in the milk somehow changed in structure to allow the clotting to occur?
I heat to 95C, cool to 42C, inoculate and incubate in a Davis and Waddel electric incubator for 10Hrs and it always works. I reuse some for the next batch, but after 3 uses, I go back to the stock powder.
Overall I like it and it likes me.
I have not tried any of the other cultures as this one is good for me.

I had already bought this Joghurt starter earlier this year and have been very happy with it.
Good consistency and good flavour. I have been reusing Joghurt from previous batch for a new one and it is working well.
The one I bought a few weeks ago was a gift. I will keep using this particular starter, but I am also interested to try some of your new ones coming in.

I like yogurt and it is hard to find yogurt that is not full of sugar. Even the plain yogurt has too much sugar.
I love the rose flavored yogurt and this is the only place I have seen it. I sometimes stop making yogurt because I get too busy. I just don’t eat any yogurt then. I am an old customer and I am going to try and find more time to make yogurt.

It’s a healthy breakfast starter with fruit and toast. Plus, it tastes great! I much prefer to make my own (without sugar) compared to store-bought yogurt which I eat like a dessert.

Making our own is healthier than store bought, I can better control the tartness and sugar content, the quality is excellent and it is relatively easy to do (I use raw goats milk which sometimes is a little more challenging).

I eat yogurt mainly for its probiotic characteristics that promote a healthy gut biome. I prefer to make my own because store-bought yogurt is usually filled with stabilizers and preservatives. I have noticed that these additions change the taste of yogurt.

I eat yoghurt for breakfast each morning with fruit because it is a tasty and nutritious meal. I also often have some at lunchtime as a dessert.
During the March lockdown it was difficult to get out to buy yoghurt without going to the supermarket (which we wanted to avoid), so I bought a yoghurt maker and haven’t looked back. We now make several batches a week, and my partner bought me some of your yoghurt starter for my birthday. We both really like it, so I am now buying more!

Recently I have started a new habit of not washing out the old yogurt from the 3 liter starter container, and just pouring the new batch of sterile milk and starter into the bucket….I have gotten better results, sometimes from doing this.
