Ivo, I store the freeze-dried grains in the freezer & seal the bag tightly since you said the grains are hydrophyllic. Fine. Somebody mentioned freezing the starter, not the grains, but the already-made yougurt that I might have saved for a new batch. I’ve never used my own already-made yogurt for the next batch. I have always used new freeze-dried grains. I do worry about the world shutting down & not being able to get your grains.

Thanks for sending the yogurt handbook so quickly. I’ve a question about the “one packet” that is required for culturing the one quart of non dairy milks. As I’ve purchased the bag of
Bulgarian starter, with the instructions to use 1/4 teaspoon for regular milk, I’ll need to know the quantity, in teaspoons for making one quart of soy and almond. I assume it’s less than 1/4 tea. considering that makes a larger quantity.
I’ve read that your recipes for non dairy require agar agar as a thickener. I’ve been using that for years and do have great success. I’ll try your kefir starter soon!

My wife and I visited Cuba to meet our daughters Fianci’s family. The hotel where we stayed served excellent yogurt for breckfcast. I learned that the strain of yogurt came from Bulgaria. I liked the tart taste of the yogurt better than the more bland yogurt available in markets in the US. I found your product on the Web.

The reason I ordered the starter powder is that I am trying to reduce the plastic I buy.
I have a fabulous American Greek yogurt maker and filter system but I have always have to buy some starter yogurt for it which involves buying a plastic container.
I have never tried starter powder before.
I have a question though, I don’t really need a Greek yogurt starter for making Greek yogurt , do I? I could use the bacillus one?
I make yogurt as a substitute for cream/ice cream and also I love to eat it and make yogurt

I bought a larger pack size, not to make a large batch, but to save some money . My batch size is one litre.
So the first time, I measured out one thirtieth of the culture (I didn’t read your instructions well enough). I use a yogurt maker, so set it to 43C for 8 hours, our regular settings. It came out with a very firm (too firm) curd on the bottom, and a large amount of expelled whey sitting on top.
Second batch, I reverted to using one gram of the culture, temperature still at 43, but reduced time to 5 hours. This resulted in a good yogurt, very happy with texture and flavour.

Hi Ivo – we are trying to make our own yogurt for a diet my son must follow. Most yogurts have too many strains of bacteria and he should eat yogurt with only two. We prefer to make our own so there is less sugar.

I am from India and grew up eating yogurt at every meal I need not explain to you the nutritional boost it provides including help with digesting the food! Back home my mother never bought yogurt, she churned out a fresh batch for every meal (i.e two times a day- 365 days!)! I’ve always loved the taste and texture of yoghurt, and over the past 5 years or so I’ve been doing as much as I can to reduce my plastic waste. Yoghurt only comes in plastic (even though glass seems like it would be a good alternative), so I prefer to make my own.

We are using our oven light which is about 105 F. Ferments nicely and comes out nice and thick. We are doing the SCD diet which requires minimum of 24 hours.
