I had been making my yogurt using a commercial yogurt as a starter, and it turned out pretty well. However, I ordered some of your Greek yogurt starter in a quest to make yogurt like my
grandmother’s. She (and the rest of my father’s family) was from Cyprus, and her yogurt was amazing: thick and tart. I’ve been trying to replicate it, and your Greek yogurt starter comes pretty close.
I usually incubate mine (in an Instant Pot to maintain a constant temperature) at 110°F for about 12 hours. I’ve played around with slightly longer times, although I’ve heard that can result in the curds falling apart (although I can’t say that’s happened for me). I also can’t say that I’ve found any consistent patterns in making a really good batch of yogurt other than the fact that using fresh milk and relatively fresh starter give me the best results. I strain my yogurt through cheesecloth for about 8-12 hours for a nice thick consistency.
I’d be interested in any suggestions you might have. So far, I don’t have any real complaints, especially with your starter, but I’m always on the quest to make even better yogurt!

I don’t buy yogurt anymore… I make it because it tastes great, it’s healthy, and it reminds me of my grandmother… and when I make it for my father and serve it to him with honey and fruit, it reminds him of his youth

I have an instant pot pro, it’s got an incubation timer for eight hours at that temperature for incubation.

The starter worked well. I used some of the first batch to make a second batch which was better… less whey, more solids. You have a good product.
