I had a cup of peanuts sitting on my counter for a week without anyone eating them so I decided to transform them into something that I was sure everyone would like.
I blended the peanuts in my kitchen robot for 5 minutes to make peanut butter, whipped in some of my sourdough discard and yogurt, and baked these happy fellas 🙂

Here is the recipe if you want to try it:
- 2 cups peanut butter (ready-made or as in my case – blended from some leftover peanuts)
- 1 cup brown sugar
- 2 eggs
- 2.5 cups all purpose flour
- 3/4 cup yogurt
- 100 g discard
- Pinch of salt
- A few drops of vanilla extract (or cinnamon powder if you prefer a hint of cinnamon taste)
- 1 teaspoon baking soda (or baking powder)
Add all ingredients together and knead the dough. I used a stand mixer but you can easily do it by hand too.
Let it stand for 30 mins and do some stretch and folds (or knead it some more). Then let it stand for 30 mins more.
At this point, the dough will be somewhat hard but easily rollable.
Roll it about 0.2” (1/2 cm) thick and cut your cookies with a cookie cutter in any form you’d like. I used a cup to cut mine into discs.
Bake 15 mins at 355°F (180°C) oven. If you want them more chewy bake about 3 mins less.
Note: The cookies wont raise much during baking.
